Salted Egg Yolk Fried Chicken // 咸蛋黄金沙炸鸡



Salted egg chicken is one of the most popular dishes in Singapore. In fact, Singaporeans seem to like anything with salted egg yolk. I'm not sure where was it originated from but I must salute the person who invented this style of cooking. You gotta try this to believe me.

Ingredients
Serves 9 - 10 person

Marinating Ingredients for chicken drumlets
--------------------------------------------------------
1kg chicken drumlets
2 tablespoons oyster sauce
2 tablespoons light soy sauce
1 tablespoon Shaoxing Huatiao cooking wine
3 teaspoons of cornstarch
Egg white from 1 egg

Salted egg yolk sauce ingredients
--------------------------------------------------------
35g butter
3 cloves of garlic - minced
4 salted egg yolk (recommended to up this to 6)
1 handful of curry leaves
3 chilli padi - sliced (optional)
1 teaspoon sugar
0.5 teaspoon salt
